HALF & WHOLE BEEF

When you purchase a Dorsey Ranch steer, you are making an investment, an investment in a live animal as well as an investment into your health. We offer our beef as individual cuts, as well as whole and halves. By purchasing beef in this manner, you receive multiple beef cuts that will meet you and your family’s needs and desires.

We sell our whole and half steers by hanging weight. What does this mean? Hanging weight is the total weight of the carcass without the head, hooves, hide, and innards. Live weight is the total weight of the animal prior to being processed. Live weights and hanging weights will vary. Your beef will be dry aged on average 14+ days, unless requested longer (which is an additional cost). The beef will be butchered and packaged to your specifications. On average, you will receive 65% of hanging weight in packaged cuts.
